Do you want a Low carb & calorie frittata ?!?....

If it’s a yes !???.. well .. It’s frittata time !!


You know that I hate waste and had an Awful lot of eggs to use up ( my mums pet chickens are laying like crazy .. such good girls !!!!) and I also had some bits in fridge too .. so I though I’d share one of my go to recipes that I rely on ally as it’s healthy too !!..


Frittatas are the ultimate clean-out-the-fridge weeknight or weekend dinner or weekend brunch recipe.

And I love them !! And I have loads of variations of them ( depending on what I have in fridge!)

But tonight it was this ...


200g lean ham (240 calories 9g carbs )

150g @eatlean cheese (254 calories 1.5g carbs)

200g mushrooms (44 calories & 7.5g carbs)

50g leek ( 30 calories & 7g carbs)

12 eggs (792 calories )

Pinch salt & pepper & garlic granuals

Splash Milk ( optional)

@eatlean shaker

Parsley


Preheat the oven to 180

Crack the eggs into a medium mixing bowl. Add your dairy of choice and the salt. Whisk just until the egg yolks and whites are blended. Whisk in all or half of the cheese (you can reserve the other half for topping the frittata before baking, if desired). Set the mixture aside

In a pan warm the frylight over medium heat & Add the mushrooms, leek & ham Cook for a few minutes, stirring occasionally, then Season to taste.

Pop mixture into an ovenproof dish and top with egg mixture and remaining cheese and sprinkle cheese & parsley on

Pop in oven and bake for 30-35 mins or until firm to touch and browned

Cool slightly and serve


I got 8 slices out of it at 160 ish calories a slice


I had it with salad !
