Healthy chicken curry soup

This is lush !



CURRY CHICKEN SOUP

(with konjac rice )

This was dinner last night with some @slimsfoods crackers , and I froze another 4 portions down ….

I just used the veg I had left in my fridge , so you could use whatever veg you like !

This Curried Chicken Soup was absolutely delicious 🤤….

its a quick low calorie one-pot meal, that really hits the tastebuds, it’s filling and healthy!

INGREDIENTS

Frylight

2 x medium potatoes, peeled & chopped

1 yellow onion chopped

3 carrots , chopped

1/2 suede diced

2 clove garlic , minced

1 tablespoon freshly minced ginger

4 teaspoons @schwartz.uk curry powder

1x Tsp turmeric

4 cups @knorruk vegetable broth

1 cup red lentils

350g diced chicken breast

Salt & pepper

Konjac rice

Heat the oil in a skillet over medium-high heat, and saute the onion,potato , carrot, and suede until they start to soften, about 5 minutes.

Then Add in the garlic, ginger, and curry powder, and stir until fragrant, about one more minute.

Add the diced chicken to brown and flavour

Add in the broth and lentils, and give the pot a stir,Season with salt & pepper , and bring the soup to a boil.

Once boiling, lower the heat to a simmer and cover the pot, and leave to slow cook for 3 hours ( or until vegetables & lentils are tender…)

Then add the konjac rice about 10 min before serving!

The potato & lentils should naturally thicken the soup so no need for cream or flour unless you want to !
