Cauliflower burger buns

( my pretend tower burger)



I had a lot of cauliflower I had to use up , and I mean a lot !.. lol .. and I hate waste !!!... So I was wondering if you could make “bread rolls “or “burger buns” out of cauliflower rice .....

So I had a play ....



I Preheated oven to 180 , Then Placed cauliflower into food processor and pulsed until crumbs about half the size of a grain of rice.

Place cauliflower into large microwave-safe bowl and microwave for 2 minutes. Your cauliflower should be soft and tender (and hot!). If you've made cauliflower pizza or breadsticks with the cloth wringing dry method, do the same , once cooler .


4. Allow cauliflower to cool for a few minutes. Then add in egg cheese , almond flour and seasoning. Stir to combine until smooth paste forms. Divide dough into 4 equal parts. ( I got 4 x 200g in weight ) Place onto large baking sheet lined with parchment paper. Using your hands , shape into bread roll shapes . Sprinkle with seeds of using and Bake in oven for about 45 mins or until golden brown. Remove from oven and let cool

I used ....

600g cauliflower ( riced ) ( 150 calories & 31g carbs)

10g Almond flour ( 61 calories & 0.6g carbs)

2x small eggs ( 108 calories & 0.5g carbs)

30g @eatlean cheese ( 51 calories & 0.1g carbs)

30g mozzarella ( 91 calories & 0.8g carbs)

Sprinkle Parmesan (5g)

1/2 tsp bicarbonate

1/4 tsp xanthan gum

Seasoning( I used pepper & garlic )

Sprinkle seeds if using


For 4 BIG BAPS it was 461 calories & 33 g carbs

So

115 calories & 8.2g carbs each !


( you could reduce it by using mozzarella light , but I didn’t have any in !)


( I used taste the difference skinny burgers at 112 calories each .... and @fakeawayfoodco burger sauce in mine , for a 400 calorie meal ... !)

Not bad at all !.. and at least the cauliflower didn’t go to waste !!! X
