Low carb smoked paprika chicken lasagne

Smoked paprika chicken lasagna with @lodough


• 2 pieces of Lo-Dough (78 calories & 4.4 g carb)

• 250g of lean chicken mince ( 340 calories & 1.8g carbs)

• 200g chopped tomatoes ( 44 calories & 7.6g carbs)

• 1 courgette , finely chopped ( 52 calories &10g carbs )

• 1/2 onion, finely chopped ( 23 calories & 5.5g carb)

• 10 mushrooms, finely chopped ( 44 calories & 6.5g carbs)

50g spinach ( 12 calories & 1.8g carbs )

• 2 x clove of garlic, finely chopped (26 calories &4.9g carbs)

• 1 pinch fresh coriander , finely chopped

• 1 chicken stock pot, made up to 125ml ( 30 calories & 2g carb)

• 3 tablespoons of half fat creme fraiche (135 calories & 1.2g carbs)

• 50g of grated @eatlean cheese ( 84 calories <0.1g carb)

• 20g of finely grated parmesan ( 86 calories & 0.8g carb

• Spray oil

Salt and pepper & pinch smoked paprika and some extra garlic granuals to taste if needed


Whole thing is 858 calories & 28.9g carbs


Preheat the oven to 180C


I used lean chicken mince with lots of finely chopped vegetables - ( I used courgettes & mushrooms, & spinach ..Once softened (in fry light!) add chopped garlic , smoked paprika and salt & pepper, mix with stock and tinned tomatoes and slowly cook down (on the hob, or in a medium-low oven) for a couple of hours until it reaches a dryish consistency. When it comes to layering up this lasagne - I used creme fraiche , but I have used a small amount of cheese sauce before ( check calories & carbs ) - go easy on your cheese - or use a half fat cheese ( I used @eatlean ). This will give you a much lower fat dish, with slightly fewer calories .


2. Roll out your 2 pieces Lo-dough flat.


3. Take approximately half of your ragu sauce and spread in the bottom of a baking dish (circular is easiest, given Lo-Dough's shape!).


4. Add one piece of Lo-Dough on top and spread approx 1.5 tablespoons of creme fraiche or cheese sauce ( whatever your using ) over this piece.


4. Add the remaining ragu, the second piece of Lo-Dough, the remaining creme fraiche or cheese sauce and sprinkle over the cheese. And a pinch of parsley


5. Bake in the oven for 30-35 minutes, or until golden brown. Take out and serve each portion With a salad if you wish !!
