It’s soup weather up here !

So this is what I had yesterday!!


Low carb & calorie Turkey soup !..

..As it’s a soup kinda day !!! (- and I had to clear out the fridge and use leftovers!!.. )

I thought I’d share !!

What I used ...

Squirt @frylite

100g swede diced ( 36 calories & 8.1g carbs)

100g leek sliced (40 calories &5.5g carbs)

100g celery chopped ( 14 calories & 2.9g carbs)

50g celeriac diced ( 21 calories & 4.6g carbs)

50g yellow onion chopped ( 21 calories & 5.1g carbs)

100g carrot diced ( 41 calories & 9.5g carb)

1/2 teaspoon dried thyme

1/4 teaspoon black pepper freshly ground

1 teaspoon garlic powder or chopped garlic

2x chicken stock cubes ( 19 calories & 2.9 g carbs )

200g cooked Turkey shredded ( 270 calories)

1 tablespoon fresh parsley chopped

1 litre water

My whole pot of soup was roughly 462 calories & 36.6g carbs

And I got 4 big bowls out of it .. at 115 calories & 9.1g carbs each .. so I had it with a couple of @slimsfoods crackers !!

Instructions

Heat a soup pan over medium high heat. Add spray @frylite ,add the celery and onion.

Stir celery, onion, leek , swede and carrots until they are just beginning to soften. Add the thyme and black pepper & chopped garlic ,Continue to cook vegetables until they are crisp-tender.

Add chicken stock cubes to roughly 1 litre boiling water , Stir for couple minutes then add the broth to pan while stirring. Stir in chicken or turkey meat.

Bring soup to a simmer. Simmer, stirring occasionally, until vegetables are tender.

Taste and add salt if necessary.

Stir in parsley just before serving.
