A special celebration cake !..

I made this for a special occasion

Vanilla & chocolate celebration cake I made for @exantediet reaching 40k Instagram followers ….

This recipe is For 2x layers ( to divide between 2x cake tins)

( so I made this with vanilla, then another 2 layers with chocolate.. )

  • So for 2 layers …..

  • 2x packs @exantediet shake mix

  • 25g almond flour

  • 15g egg white powder ( I used @myprotein)

  • 1 tsp baking powder

  • ¼ tsp salt

  • 6 large egg whites ( about 200ml)

  • 1 tsp cream of tartar

  • 30g powdered erythritol

  • 1 tsp @exantediet vanila flavour drops

  • 1x egg yolk

So for 2 layers it’s 759 calories & 35.3 g carbs

So for all 4 layers it’s double that..

1518 calories 70.6 g carbs

I got 10 nice slices coming in at

151 calories & 7 g carbs a slice .. then I’ve to add the calories for cream & yogurt mix .


  1. Preheat the oven to 160°C Prepare your cake pans by lining it with grease proof paper Do not grease the pan on the sides .

  2. Sift the almond flour, @exantediet shake pack , baking powder, and salt into a medium-sized bowl. Then Sift all ingredients together a second time to get rid of any lumps and set aside.

  3. In a separate bowl, whip the egg whites and cream of tartar until frothy. While continuing to beat the egg whites, add @exantediet vanilla flavour drops & sweetener Whip until stiff peaks form.

  4. Add about one-third of the sifted ingredients to the egg whites & gently fold the dry ingredients into the egg whites. Repeat until all of the dry ingredients are added. Fold the ingredients carefully so that the egg whites do not deflate.

  5. Place the batter into the prepared pan and gently smooth the top until even.

  6. Bake for 18-20 mins or until the top is browned & springy to the touch. Let cool 15-20 minutes before inverting the cake from the pan. The cake may deflate slightly as it cools. .. I used 2 vanilla shakes for 2 layers and then repeated above steps with 2 chocolate shakes for other 2 layers ( as it’s a special celebration) Then I whipped up some low calorie cream and some natural skyr yogurt and a bit of powdered sweetener to make filling and topping (to keep calories & carbs healthy & low) I added 414 calories & 10g carbs for cream filling & frosting so it would add 41 calories & 1g carbs a slice to final calories.. So for a whole scrummy piece it’s 192 calories and 8g carbs per slice all in ! ❤️❤️❤️❤️❤️❤️❤️❤️❤️❤️❤️❤️ The Number decorations I made out of a cake I made from @exantediet shake that I had leftover and I covered with some royal icing - but that was just to celebrate ,so it’s optional ! But all in all a healthier version of a celebration cake ! So it’s my protein shake Angel food cake recipe Hope you enjoy!
