Lasagne or Moussaka ??..
Is it a lasagne.. or a mousakka ?

500g 2% @sainsburys Turkey mince (456 calories 0.8g carbs )
2 courgettes sliced thinly (104 calories & 20g carbs)
1 large onion, finely chopped ( 63 calories & 15 g carbs)
200g mushrooms (44 calories & 7g carbs)
2 garlic cloves, crushed ( 8 calories & 1.8g carbs )
2 tsp ground cinnamon
1 tsp ground cumin
1 Tsp mixed spice
Garlic granuals
Salt& pepper
40g tomato purée (40 calories 7g carbs)
500ml chicken stock (30 calories & 2g carbs)
FOR THE WHITE SAUCE
250g @grahamsthefamilydairy natural skyr yogurt ( 160 calories & 9g carbs)
1 large egg ( 66 calories)
40g grated @eatlean cheese (68 calories & 0.2 g carbs)
Sprinkle @eatlean smoked shaker cheese
Heat the oven to 180°C.
Cut the courgettes into strips, about 5mm thick maximum. You can carefully use a mandoline or a knife to do this.
Lay the courgette slices onto a microwaveable plate season, and cook for 2 mins , They need to be soft , but not mushy.
Fry the turkey mince for 3-4 minutes, stirring constantly until the turkey has browned.
Add the garlic & onion & mushrooms and cook for a couple minutes , then add the herbs , spices , tomato purée and stock and season. Simmer for 5-10 minutes, stirring frequently, until cooked through & you get a thick sauce.
Combine the yogurt, egg and cheese , some salt and pepper, and whisk. Cook to thicken and melt cheese ( u can add extra milk if needed )
Place a layer of the turkey sauce into the bottom of a medium-sized ovenproof baking dish (about 20 x 25cm), top with a layer of courgette slices, another layer of turkey, then white sauce and repeat until all the turkey sauce and courgette have been used up.
Bake for 20-25 minutes. The topping needs to have firmed and be a golden brown & bubbling.
