IRN BREW GAMMON

No added sugar @irnbru GAMMON


I’ve been itching to do this one , since I did my Diet Coke one ...


For the Ham

2 kg lean gammon joint ( or what size you want !)

1 onion (peeled and quartered)

6/7 Peppercorns

Tbsps cinnamon

Tsp garlic granuals

2 litres Irn Bru


For the Glaze

2 Tbsp @irnbrew liquor

1 Tbsp @nkdliving brown Erythritol

2 Tbsp Wholegrain Mustard

Cloves


I boiled in water first to get rid of any excess salt ...


Then I Put the gammon in a pan & added the onion, then pour over the Irn Bru & add peppercorns and the cinnamon & garlic


Bring to the boil, reduce to a good simmer, put the lid on, though not tightly, and cook for just under 2½ hours. If your joint is larger or smaller, work out timing by reckoning on an hour per kilo.


once cooked ,take it out of the pan and let cool a little Before attempting to glaze

Reserve a bit of the Irn Bru liquor for the sauce.

Then remove the skin, leaving a very thin layer of fat. Score the fat with a sharp knife to make fairly large diamond shapes. Stud the intersections with cloves.


Mix together the brown sweetener ,mustard and the bit of the Irn brew liquor and spread it over the fat.


Preheat the oven to 180 Cook in a lined roasting tin for foil-lined roasting tin for approximately 10 -15 minutes or until the glaze is burnished and bubbly.


I carved once cold and I will weigh it out for calories & carbs for my meals .. ( and freeze some down !)


It was really tasty & surprisingly good for no added sugar !!
