Haddock , prawn & sweet potato curry

…fish curry !?!?… stay with me , it’s lush !!!

Haddock ,prawn & sweet potato curry …


I promised to share the recipe & as it #fridayfakeaway time , I thought I would …


It really was tasty .. I’d never had haddock in a curry .. but I definitely will from now on !


I had bits & bobs to use again , it was haddock & prawns , but you could swap with whatever, it would work ..


But I made this …


1 tablespoon coconut oil

1/2 large onion, chopped

3 cloves garlic, chopped

Thumb-sized piece of fresh ginger, peeled and chopped

1/2 green chilli, finely chopped

Bunch of coriander, stalks chopped and leaves reserved for garnish

1 teaspoon coriander seeds, crushed

2 teaspoons ground turmeric

2 lime leaves

2 sweet potato, peeled and chopped into 1cm cubes

1x potato chopped and peeled

1 teaspoon fish sauce

1 sploosh white wine ( optional )

1 x 400ml tin light coconut milk

500g skinless smoked haddock fillet, cooked & cut into large chunks

200g peeled prawns

10x mini red sweet peppers or equivalent ( optional )

2x tablespoons of @mayflower curry powder ( to thicken )



Heat the coconut oil in a large pan, then add the onion and garlic and sauté for a few minutes over a medium heat. Next add the ginger, chilli, coriander stalks, coriander seeds, turmeric and lime leaves and continue to sauté for 5 minutes, stirring occasionally.

Add the sweet potato, fish sauce, white wine and coconut milk and bring to a simmer. Simmer for 12-15 minutes until the sweet potato is soft.

Add the @mayflower curry powder and stir to thicken

Add the prawns to the pan, stir carefully and cook for 4-5 minutes, then add cooked haddock

Simmer for couple more minutes & Serve or pop into container in portions for fridge



I got 4 nice portions out of it .. and definitely lower in calories & carbs ..
