I hate waste .. so I’ve started fridge special Friday!!!
My #fridayfridgespecial ...
Using all my veg I had left !!...
I quickly got it ready before I go shopping to restock the fridge ... ( I’ll reheat when I want it !)
Cheesy stuffed aubergine with soy , ginger & garlic ...
Half for me & half for Hubster...
I looked in my fridge to see what I had to use up now ...
and I had ...
1 x small aubergine ( 132 calories & 31 g carbs )
100g mushroom( 22 calories & 3.2g carbs )
1 peppers ( 30 calories & 7g carbs)
1/2 onion ( 23 calories & 5.5g carbs)
1 x small avocado ( 240 calories & 12g carbs)
1/2 courgette ( 26 calories & 5.4g carbs )
30g @eatlean cheese ( 50 calories & <01g carbs )
So I made this !...
I chopped up mushrooms and peppers , courgette and a bit of onion and hollowed out the aubergine and chopped that too and chopped the avocado and added ( it makes it slightly creamy..) .. fried it all together with some frylight, onion , ginger & garlic .. added a bit of reduced salt soy sauce and added some chilli flakes ...
in the meantime I cooked the 2 halves of aubergine slightly on each side and put into a baking pan ..
then divided mixture out between the 2 halves and topped with some @eatlean cheese
Cooked in oven at 170 until cooked through and soft and browned on top !...
Fridge is now clear and ready for the new food shop ..
Whoo hoo !
And we have a healthy Friday night dinner !!
( I’ll just reheat in microwave when I’m ready to munch !! )
So whole thing is .. 523 calories & 53 g carbs
So half each it’s ... 261 calories & 26.5g carbs per portion !
