Low carb & calorie “Angel food cake “

1/2 cup @nkdliving Granular sweetner
1/2 cup powdered @nkdliving powdered Sweetener
1 3/4 cups @costco almond flour (about 175g) ( 1154 calories & 37.8g carbs )
1/2 cup egg white protein powder (about 40g ) (134 calories & 1.8g carbs )
1/4 tsp salt
10 large egg whites room temp( 170 calories)
1/2 tsp cream of tartar
6x drops @skinnyfoodco strawberry crush
1/2 tsp vanilla extract
Place an oven rack in the second lowest position and preheat the oven to 160*.
And get cake pan prepared
In a bowl, whisk together the granular and powdered sweeteners
In another bowl, whisk together the almond flour, protein powder, half the sweetener mixture, & the salt. Use a sieve to sift the flour mixture into another bowl. Do this back and forth between the bowls a couple times to get rid of any lumps
In separate bowl, beat the egg whites with the cream of tartar until frothy, slowly add the remaining sweetener until the whites hold medium peaks
Add the extracts & continue to beat until the whites hold stiff peaks
Gently fold the flour mixture into the egg whites until well combined (do it a bit at a time , a spatula works best for this). Be sure to scrape the bottom of the bowl well to mix in all ingredients
Spread mixture in the prepared pan and smooth the top, lightly tap the pan on the counter a few times to release any air bubbles.
Bake for 40 to 50 minutes, until the top is uniformly golden & springs back when lightly pressed.
Turn oven off and let stand for 5-10 mins then Remove and let cool in the pan 20 minutes, turn the pan upside down & let cool completely.
Run a sharp knife around the inside of the pan, , to loosen the cake. If the pan has a removable bottom, you can simply push up to release the cake. Otherwise, invert the pan over a cake plate & tap the bottom to release the cake.
I served with a dollop of @arladairyuk skyr mixed with some more @skinnyfoodco strawberry crush & some berries !
Very low carb & calorie& so light & fluffy !
